Ingredients

Scale

Skewers

  • 8 oz (225g) feta cheese, cut into small cubes
  • 1 large cucumber, cut into thick slices or half-moons
  • ½ cup cherry tomatoes, halved (optional)
  • ¼ cup Kalamata olives, pitted
  • Wooden toothpicks or small skewers

Dressing

  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • ½ tsp dried oregano
  • Fresh parsley or dill, chopped, for garnish

Instructions

  1. Prepare the Ingredients: Cut the feta cheese into bite-sized cubes. Slice the cucumber into thick slices or half-moons, and halve the cherry tomatoes if using. Ensure the Kalamata olives are pitted and ready for threading.
  2. Assemble the Skewers: Thread one cube of feta, one cucumber slice, one cherry tomato (if using), and one Kalamata olive onto each wooden toothpick or small skewer. Repeat this until all the ingredients are used up.
  3. Make the Dressing: In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, and dried oregano until well combined to create a tangy and fragrant dressing.
  4. Drizzle & Garnish: Lightly drizzle the assembled skewers with the olive oil and lemon dressing. Sprinkle chopped fresh parsley or dill over the top to add a burst of color and fresh herbal flavor.
  5. Serve: Arrange the skewers attractively on a platter and serve immediately as a delicious, light appetizer perfect for any occasion.

Notes

  • For a vegan version, substitute feta cheese with marinated tofu or a plant-based cheese alternative.
  • You can omit cherry tomatoes if desired, or add other veggies like bell pepper chunks for variation.
  • Make the dressing ahead of time and store in the fridge for up to 2 days.
  • These skewers are best served fresh but can be refrigerated for a few hours before serving.
  • Use fresh herbs like parsley or dill to enhance the flavor and presentation.
