For the Feta Board:

  • 1 block (8 oz / 225 g) feta cheese
  • 1/2 cup kalamata olives
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup roasted red peppers, sliced
  • 1/4 cup cucumber, sliced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Fresh parsley, chopped, for garnish
  • Optional: drizzle of honey or balsamic glaze

For the Warm Pita Chips:

  • 4 large pita breads
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • Salt, to taste

Instructions

  1. Make the Pita Chips: Preheat your oven to 375°F (190°C). Cut each pita bread into small triangles to form chip-sized pieces. In a bowl, toss the pita triangles with olive oil, garlic powder, dried oregano, and salt evenly. Spread them out on a baking sheet in a single layer and bake for 8–10 minutes or until they are crispy and golden brown. Remove from oven and let cool slightly.
  2. Assemble the Feta Board: Place the block of feta cheese in the center of a serving board or platter. Arrange the kalamata olives, halved cherry tomatoes, roasted red pepper slices, and cucumber slices around the feta. Drizzle the olive oil over the feta cheese and sprinkle with dried oregano and freshly chopped parsley. For a touch of sweetness, optionally drizzle some honey or balsamic glaze over the top.
  3. Serve: Arrange the warm pita chips around the board. Serve immediately so guests can scoop the feta and accompany it with the vibrant toppings and crispy pita chips for a delicious Mediterranean experience.
