For the Beef Gyro:
- 1 lb (450g) beef sirloin or flank steak, thinly sliced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp ground cumin
- ½ tsp smoked paprika
- Salt & black pepper, to taste
- Juice of ½ lemon
For the Garlic Yogurt Sauce:
- ½ cup Greek yogurt
- 1 clove garlic, minced
- 1 tsp lemon juice
- 1 tsp olive oil
- Salt & pepper, to taste
For the Wrap:
- 4 large flatbreads or pita breads
- 1 cup shredded lettuce
- ½ cup sliced cucumber
- ½ cup cherry tomatoes, halved
- ¼ cup thinly sliced red onion
- Optional: crumbled feta cheese, olives
- Marinate the Beef: In a bowl, combine beef slices with olive oil, minced garlic, dried oregano, ground cumin, smoked paprika, lemon juice, salt, and black pepper. Mix well to ensure the beef is evenly coated. Cover and let marinate for at least 30 minutes, and up to 2 hours in the refrigerator for more flavor.
- Prepare the Garlic Yogurt Sauce: In a small bowl, whisk together Greek yogurt, minced garlic, lemon juice, olive oil, salt, and pepper. Adjust seasoning to taste and chill in the refrigerator until ready to serve to allow the flavors to meld.
- Cook the Beef: Heat a grill pan or skillet over medium-high heat. Add marinated beef slices in a single layer and cook for 2–3 minutes per side, or until browned and cooked to your preferred level of doneness. Remove from heat and let rest briefly.
- Assemble the Wraps: Warm the flatbreads or pita breads lightly on a skillet or in the oven until pliable. Spread a generous layer of garlic yogurt sauce onto each flatbread. Top with shredded lettuce, sliced cucumber, cherry tomatoes, red onion, and cooked beef slices. If desired, add crumbled feta cheese and olives for additional flavor.
- Wrap & Serve: Fold the sides of the flatbread over the fillings and roll tightly to form a wrap. Serve immediately with extra garlic yogurt sauce on the side for dipping.
