Chicken Souvlaki

Feta Dip

  • 150 g feta cheese
  • 1/2 cup Greek yogurt
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 garlic clove
  • 12 tbsp water (to loosen)

Mezze Board

  • 46 pita breads (warmed & sliced)
  • 1 cup cherry tomatoes
  • 1 cucumber (sliced)
  • 1/2 red onion (thinly sliced)
  • 1/2 cup olives
  • Fresh parsley or dill
  • Lemon wedges

Instructions

  1. Prepare Marinade: In a bowl, mix olive oil, lemon juice, minced garlic, dried oregano, smoked paprika, ground cumin, salt, and black pepper together until combined.
  2. Marinate Chicken: Add the chicken cubes to the marinade and coat them thoroughly. Let the chicken marinate for at least 1 hour, or ideally overnight in the refrigerator for deeper flavor.
  3. Skewer Chicken: Thread the marinated chicken pieces onto skewers evenly, ensuring they are not too crowded to allow even cooking.
  4. Grill Chicken: Preheat grill to medium-high heat. Grill the chicken skewers for 10 to 12 minutes, turning occasionally until fully cooked through and lightly charred on the edges.
  5. Make Feta Dip: In a blender or food processor, combine feta cheese, Greek yogurt, olive oil, lemon juice, garlic clove, and 1 to 2 tablespoons of water to achieve a creamy consistency. Blend until smooth.
