For the Grilled Chicken

Garlic Tzatziki Sauce

  • 1 cup Greek yogurt
  • ½ large cucumber, grated & squeezed dry
  • 23 cloves garlic, finely minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp chopped dill or mint
  • Salt & pepper to taste

Wrap Components

  • 4 Greek pitas or flatbreads
  • ½ cup cucumber, diced
  • ½ cup cherry tomatoes, halved
  • ¼ cup red onion, thinly sliced
  • ¼ cup feta cheese, crumbled
  • Optional: olives, lettuce, pickled turnips

Instructions

  1. Marinate Chicken: In a bowl, combine olive oil, lemon juice, garlic powder, minced garlic, oregano, smoked paprika if using, salt, and black pepper. Add the chicken breasts or thighs, coating them thoroughly with the marinade. Cover and refrigerate for at least 30 minutes, or preferably overnight for deeper flavor.
  2. Grill Chicken: Preheat your grill or grill pan to medium-high heat. Place the marinated chicken on the grill and cook for 6 to 7 minutes per side, until fully cooked through and slightly charred on the edges. Remove the chicken and let it rest for 5 minutes before slicing it thinly.
  3. Make Garlic Tzatziki Sauce: In a mixing bowl, combine Greek yogurt, grated and squeezed cucumber, finely minced garlic, lemon juice, olive oil, and chopped dill or mint. Season with salt and pepper to taste. For best flavor, chill the tzatziki for at least 15 minutes before serving.
  4. Assemble Wraps: Warm the Greek pita breads slightly to make them pliable. Spread a generous layer of the garlic tzatziki sauce on each pita.
