Ingredients

Scale

For the Lamb Marinade

  • 1 lb lamb shoulder or lamb leg, thinly sliced
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp black pepper
  • 1 tsp salt

For the Garlic Yogurt Sauce

  • 1 cup Greek yogurt
  • 2 garlic cloves, minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp chopped fresh dill
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Wraps

  • 4 pita breads or flatbreads
  • 1 cup shredded lettuce
  • 1/2 cup sliced cucumbers
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup thinly sliced red onion
  • 1/4 cup crumbled feta cheese

Instructions

  1. Prepare the Lamb Marinade: In a bowl, combine olive oil, minced garlic, lemon juice, dried oregano, paprika, cumin, black pepper, and salt. Add the thinly sliced lamb and toss thoroughly to coat all pieces evenly. Marinate for at least 30 minutes or up to 2 hours for deeper flavor infusion.
  2. Cook the Lamb: Heat a grill pan or skillet over medium-high heat. Add the marinated lamb and cook for 5 to 7 minutes, stirring occasionally, until the lamb is browned and fully cooked through.
  3. Make the Garlic Yogurt Sauce: In a small bowl, whisk together Greek yogurt, minced garlic, lemon juice, olive oil, chopped fresh dill, salt, and black pepper until smooth. Place the sauce in the refrigerator to chill until ready to serve.
  4. Warm the Pita Breads: Heat the pita breads in a dry skillet or oven for 1 to 2 minutes until they become soft and flexible, suitable for wrapping.
  5. Assemble the Wraps: Spread a generous spoonful of garlic yogurt sauce over each warmed pita bread. Layer grilled lamb, shredded lettuce, sliced cucumbers, halved cherry tomatoes, thinly sliced red onions, and crumbled feta cheese on top.
  6. Finish and Serve: Drizzle additional garlic yogurt sauce over the fillings, then fold or roll the pita tightly into a wrap. Serve immediately with extra garlic yogurt sauce on the side for dipping.

Notes

  • Marinating the lamb for a longer time enhances the flavor and tenderness.
  • If lamb is unavailable, substitute with thinly sliced beef or chicken for variation.
  • Warm the pita gently to avoid tearing during wrapping.
  • Fresh dill in the yogurt sauce adds authentic Greek flavor but can be substituted with mint if preferred.
  • For a spicier kick, add a pinch of cayenne pepper to the marinade or yogurt sauce.
