Instructions

  1. Prepare the Balsamic Drizzle: In a small saucepan over medium heat, combine the balsamic vinegar and honey. Simmer gently for 5 to 7 minutes until the mixture thickens slightly and becomes syrupy. Remove from heat and allow it to cool; the glaze will thicken further as it cools.
  2. Grill the Halloumi: Pat the halloumi slices dry with a paper towel and brush each side lightly with olive oil. Sprinkle the slices evenly with dried oregano and black pepper. Heat a grill pan or skillet over medium-high heat and cook the halloumi slices for 2 to 3 minutes on each side until they develop golden brown grill marks and a slightly crispy exterior. Remove the cheese from the pan once grilled.
  3. Assemble the Mezze Platter: Lay the grilled halloumi slices in the center of a large serving board or platter. Arrange the cherry tomatoes, sliced cucumber, Kalamata olives, roasted red peppers, marinated artichoke hearts, hummus, and tzatziki around the halloumi. Place warm pita bread or flatbread alongside the platter. Drizzle the grilled halloumi with the cooled balsamic reduction and garnish with fresh parsley.
