Ingredients

Scale

For the Halloumi:

  • 8 oz (225g) halloumi cheese, sliced into ½-inch thick pieces
  • 1 tbsp olive oil
  • 1 tsp smoked paprika (optional)

For the Mezze Platter:

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • ½ cup Kalamata olives
  • ½ cup roasted red peppers, sliced
  • 23 tbsp fresh parsley, chopped
  • 1 small baguette or pita bread, sliced and toasted
  • Lemon wedges for drizzling

For the Lemon Drizzle:

  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • ½ tsp lemon zest
  • Pinch of salt
  • Pinch of black pepper

Instructions

  1. Prepare the Halloumi: Heat olive oil in a non-stick skillet over medium-high heat. Add the halloumi slices and cook for 2–3 minutes on each side until they become golden brown with crispy edges. If desired, sprinkle smoked paprika over the halloumi while cooking to add a subtle smoky flavor.
  2. Prepare the Lemon Drizzle: In a small bowl, whisk together olive oil, fresh lemon juice, lemon zest, salt, and black pepper until well combined. This tangy drizzle will enhance the flavors of the halloumi and vegetables.
  3. Assemble the Mezze Platter: Arrange the cooked halloumi, cherry tomatoes, cucumber slices, Kalamata olives, roasted red peppers, and toasted bread slices neatly on a large serving board to create an inviting and colorful presentation.
  4. Finish with Drizzle & Herbs: Drizzle the lemon mixture evenly over the halloumi and vegetables. Garnish the entire platter with freshly chopped parsley for a burst of freshness and color. Serve immediately to enjoy the textures and flavors at their best.
  5. Serve: Present the mezze platter as a shared appetizer, a light lunch, or a Mediterranean-inspired snack, perfect for any occasion that calls for vibrant, fresh, and savory bites.

Notes

  • For a vegetarian-friendly version, this dish is already suitable as halloumi is a cheese without animal rennet.
  • Serve immediately after assembling to maintain the crispiness of the halloumi and bread.
  • You can substitute the baguette with gluten-free bread to accommodate gluten-free diets.
  • Use fresh, high-quality halloumi for the best taste and texture.
  • Smoked paprika is optional but adds a nice depth of flavor to the halloumi.
  • Adjust the amount of lemon juice and zest in the drizzle according to your taste preference.
