  • ¼ teaspoon black pepper
  • Juice of 1 lemon

For the Creamy Garlic Feta Sauce

  • ½ cup crumbled feta cheese
  • ⅓ cup plain Greek yogurt
  • 1 large garlic clove, grated or minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 12 tablespoons warm water (to thin as needed)
  • ¼ teaspoon black pepper

For the Bowl

  • 2 cups cooked rice or quinoa
  • 1 cup shredded lettuce
  • ½ cup diced cucumber
  • ½ cup cherry tomatoes, halved
  • ¼ cup thinly sliced red onion
  • Fresh parsley for garnish

Instructions

  1. Cook the Lamb: Heat olive oil in a skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant. Add the ground lamb along with oregano, smoked paprika, salt, pepper, and lemon juice. Cook for 6–8 minutes, stirring occasionally, until the lamb is browned and cooked through. Remove from heat and set aside.
  2. Make the Creamy Garlic Feta Sauce: In a bowl, combine the crumbled feta cheese, Greek yogurt, grated garlic, lemon juice, olive oil, and black pepper. Mix thoroughly until the sauce is smooth and creamy. Add warm water gradually, one tablespoon at a time, until the sauce reaches a drizzle-friendly consistency.
  3. Assemble the Bowls: Divide the cooked rice or quinoa evenly among serving bowls. Top each with the cooked lamb gyro mixture. Add shredded lettuce, diced cucumber, cherry tomatoes, and thinly sliced red onion on top.
