Lamb and Gyro Base

  • 1 tbsp olive oil
  • 1 small red onion, thinly sliced

Charred Onion Feta Sauce

  • 1/2 cup crumbled feta cheese
  • 1/4 cup Greek yogurt
  • 1 tsp lemon juice
  • 1/2 tsp smoked paprika
  • Pinch of cayenne pepper (optional)
  • 1/4 tsp salt

Optional Toppings

  • Sliced tomatoes
  • Sliced cucumber
  • Fresh parsley or mint

Instructions

  1. Prepare lamb: In a bowl, combine the ground lamb with garlic powder, dried oregano, ground cumin, salt, and pepper. Mix gently to combine, then form the mixture into small patties or sausage-shaped pieces for even cooking.
  2. Cook lamb: Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add the lamb patties and cook for 4 to 5 minutes on each side until browned and cooked through. Remove the patties from the skillet and let them rest to retain their juices.
  3. Char onions: Using the same skillet, add the thinly sliced red onions and sauté for about 5 to 6 minutes until they are softened and have developed a slight char, intensifying their sweetness and flavor. Remove from heat and set aside.
  4. Make feta sauce: In a small bowl, combine the crumbled feta cheese, Greek yogurt, lemon juice, smoked paprika, cayenne pepper (if using), and salt. Stir well until you have a smooth and creamy sauce ready to spread.
  5. Assemble gyros: Warm the pita breads slightly to make them pliable. Spread a generous layer of the charred onion feta sauce on each pita. Add the cooked lamb patties on top, then garnish with additional charred onions, sliced tomatoes, cucumber, and fresh parsley or mint for freshness and crunch.
  6. Serve: Serve the gyros immediately with extra charred onion feta sauce on the side for dipping.
