Lemon Shrimp
- 1 lb (450g) raw shrimp, peeled and deveined
- 2 tablespoons olive oil
- Zest and juice of 1 lemon
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
Creamy Dill Feta Sauce
- ¾ cup crumbled feta cheese
- ½ cup Greek yogurt
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, finely chopped
- 1 small garlic clove, grated
- 1–2 tablespoons warm water (to thin if needed)
Wrap Assembly
- 4 large pita breads
- 1 cup shredded romaine lettuce
- ½ cup diced cucumber
- ½ cup halved cherry tomatoes
- ¼ small red onion, thinly sliced
- Fresh parsley for garnish
- Optional: sliced olives or pickled red onions
- Cook the Shrimp: Heat olive oil in a large skillet over medium-high heat. Add garlic and sauté for 30 seconds until fragrant. Add shrimp, lemon zest, lemon juice, oregano, paprika, salt, and pepper. Cook for 2–3 minutes per side until shrimp is pink and opaque. Remove from heat.
- Prepare the Creamy Dill Feta Sauce: In a small bowl, combine feta cheese, Greek yogurt, olive oil, lemon juice, fresh dill, and grated garlic. Blend or mash until smooth and creamy. Add warm water gradually to reach a drizzle-friendly consistency.
- Assemble the Wraps: Warm pita breads slightly to make them flexible. Spread a generous layer of creamy dill feta sauce on each pita. Top with cooked shrimp, shredded lettuce, cucumber, cherry tomatoes, and red onion. Drizzle extra sauce on top and garnish with parsley. Fold the pita and serve immediately while warm and fresh.
