Ingredients

Scale

Lemon Turkey Filling

  • 1 lb (450g) ground turkey
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 1½ teaspoons dried oregano
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Creamy Dill Feta Sauce

  • ¾ cup crumbled feta cheese
  • ½ cup Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh dill
  • 1 small clove garlic, grated
  • 12 tablespoons warm water (to thin if needed)

For Assembling the Wraps

  • 4 pita breads
  • 1 cup shredded romaine lettuce
  • ½ cup diced cucumber
  • ½ cup cherry tomatoes, halved
  • ¼ small red onion, thinly sliced
  • Optional: kalamata olives or pickled onions

Instructions

  1. Cook the Lemon Turkey: Heat olive oil in a skillet over medium heat. Add garlic and cook for 30 seconds until fragrant. Add ground turkey and cook, breaking it apart with a spoon, until browned and fully cooked, about 6–8 minutes. Stir in lemon zest, lemon juice, oregano, paprika, cumin, salt, and pepper. Cook for another 1–2 minutes. Remove from heat and mix in chopped parsley.
  2. Prepare the Creamy Dill Feta Sauce: In a food processor or bowl, combine feta, Greek yogurt, olive oil, lemon juice, dill, and garlic. Blend or mash until smooth and creamy. Add warm water gradually until the sauce is drizzle-friendly.
  3. Assemble the Pita Wraps: Warm pita breads slightly to make them soft and pliable. Spread a generous spoonful of creamy dill feta sauce inside each pita. Add the lemon turkey filling, then top with lettuce, cucumber, tomatoes, and red onion. Drizzle extra sauce on top if desired, fold, and serve immediately.

Notes

  • Warm the pita breads briefly in the oven or microwave to enhance pliability and flavor.
  • The sauce can be thinned with warm water to achieve a perfect consistency for drizzling or spreading.
  • Feel free to add kalamata olives or pickled onions for extra tang and texture.
  • Ground turkey can be substituted with ground chicken if preferred.
  • Leftovers should be refrigerated and consumed within 2 days for best freshness.
