For the Greek Turkey
- 1 ½ lbs (680g) ground turkey or turkey breast cut into strips
- 2 tablespoons olive oil
- Juice of 1 lemon
- 3 cloves garlic, minced
- 1 ½ teaspoons dried oregano
- 1 teaspoon smoked paprika
- ½ teaspoon ground cumin
- ¾ teaspoon salt
- ½ teaspoon black pepper
For the Roasted Garlic Feta Sauce
- 1 whole garlic head
- 1 teaspoon olive oil
- 1 cup crumbled feta cheese
- ¾ cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- ¼ teaspoon black pepper
- 1–2 tablespoons warm water (as needed for smoothness)
For the Wraps
- 4 large pita breads or flatbreads
- 1 cup shredded romaine lettuce
- 1 cup diced cucumber
- 1 cup cherry tomatoes, halved
- ¼ cup thinly sliced red onion
- ¼ cup Kalamata olives (optional)
- 2 tablespoons chopped fresh parsley
- Lemon wedges (optional)
- Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the garlic head to expose the cloves, then drizzle with 1 teaspoon of olive oil and wrap it in foil. Roast for 30 to 35 minutes until the cloves are soft and golden. Allow the garlic to cool, then squeeze out the roasted cloves from the skin.
- Prepare the Roasted Garlic Feta Sauce: In a food processor, blend together the roasted garlic cloves, crumbled feta cheese, plain Greek yogurt, lemon juice, 1 tablespoon olive oil, and black pepper until creamy and smooth. Gradually add warm water one tablespoon at a time until the sauce reaches a spreadable consistency. Refrigerate the sauce until ready to use.
- Cook the Turkey: For ground turkey: heat 2 tablespoons olive oil in a skillet over medium heat. Add minced garlic and cook for 30 seconds until fragrant. Add ground turkey, dried oregano, smoked paprika, ground cumin, salt, and black pepper. Cook, breaking apart the meat, for 6 to 8 minutes until fully cooked through. Stir in lemon juice and remove from heat. For turkey strips: toss strips with olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Cook in a hot skillet for 5 to 7 minutes until cooked through.
- Assemble the Wraps: Warm the pita breads slightly to make them pliable. Spread a generous layer of the roasted garlic feta sauce over each pita. Top with the cooked turkey, shredded romaine lettuce, diced cucumber, halved cherry tomatoes, thinly sliced red onion, and Kalamata olives if using. Sprinkle with chopped fresh parsley and squeeze lemon juice on top for added freshness. Fold the pita tightly and serve immediately.
