Pasta:

  • 300 g penne pasta

Grilled Chicken:

  • 2 chicken breasts
  • 1 tbsp olive oil
  • Salt & black pepper

Salad:

  • 6 slices cooked bacon, crumbled
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 2 cups baby spinach or arugula
  • 1/4 cup grated Parmesan (optional)

Dressing:

  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 garlic clove, minced
  • Salt & pepper to taste

Instructions

  1. Cook the pasta: Boil penne in salted water until al dente. Drain and rinse with cool water.
  2. Grill the chicken:
    • Season with olive oil, salt, and pepper.
    • Grill or pan-cook 5–7 minutes per side until cooked through.
    • Let rest, then slice.
  3. Prepare the dressing: Whisk olive oil, lemon juice, mustard, garlic, salt, and pepper.
  4. Assemble the salad:
    • In a large bowl, combine pasta, greens, cherry tomatoes, avocado, and bacon.
    • Add sliced chicken.
    • Drizzle with dressing and toss gently.
  5. Finish: Top with grated Parmesan if desired.
