Ingredients

Scale

For the Shrimp Marinade

  • 1 lb (450 g) large shrimp, peeled and deveined
  • 2 tablespoons coconut oil, melted
  • Juice and zest of 1 lime
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon honey or maple syrup
  • ¼ teaspoon red pepper flakes (optional, for heat)

For Serving

  • Skewers (soaked in water if wooden)
  • Fresh cilantro, for garnish
  • Lime wedges (optional)

Instructions

  1. Marinate the shrimp: In a bowl, whisk together melted coconut oil, lime juice and zest, minced garlic, soy sauce, honey, and red pepper flakes. Add the peeled and deveined shrimp to the marinade and toss well to ensure each piece is coated. Cover and refrigerate for 15–30 minutes to allow the flavors to meld.
  2. Prepare the grill: Preheat your grill or grill pan to medium-high heat to ensure a nice sear when cooking the shrimp.
  3. Skewer the shrimp: Thread the marinated shrimp onto the skewers carefully, ensuring they are evenly spaced for even cooking.
  4. Grill the shrimp: Place the skewered shrimp on the hot grill. Cook for 2–3 minutes per side until the shrimp turn pink and opaque — be cautious to avoid overcooking as shrimp can become tough.
  5. Serve: Remove the shrimp from the skewers and arrange on a serving platter. Garnish with fresh cilantro and serve immediately with lime wedges or atop rice, salad, or grilled vegetables for a complete meal.

Notes

  • Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
  • Adjust red pepper flakes to your preferred spice level or omit if you want a milder dish.
  • To increase servings, simply multiply ingredient quantities accordingly.
  • For a gluten-free option, use tamari or gluten-free soy sauce.
  • Marinating shrimp for longer than 30 minutes can start to cure the shrimp due to the lime juice, altering texture.
