Ingredients

Scale

Shrimp and Marinade

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp coconut oil
  • Zest and juice of 1 lime
  • 2 cloves garlic, minced
  • 1 tsp honey or brown sugar
  • ½ tsp salt
  • ¼ tsp black pepper

Garnish

  • 1 tbsp fresh cilantro, chopped

Tools

  • Skewers (soaked in water if wooden)

Instructions

  1. Marinate Shrimp: In a medium bowl, whisk together coconut oil, lime zest and juice, minced garlic, honey, salt, and black pepper. Add the shrimp to the marinade, tossing to coat evenly. Cover and refrigerate for 15 to 30 minutes to allow the flavors to meld.
  2. Preheat Grill: Heat your grill or grill pan over medium-high heat, ensuring it is hot enough to sear the shrimp nicely without overcooking.
  3. Assemble Skewers: Thread the marinated shrimp onto the skewers, making sure they are evenly spaced for consistent cooking.
  4. Grill Shrimp: Place the shrimp skewers on the grill and cook for 2 to 3 minutes per side. Grill until shrimp turn pink, become opaque, and develop beautiful grill marks, taking care not to overcook to maintain tenderness.
  5. Serve: Remove the shrimp from the grill and transfer to a serving platter. Garnish generously with freshly chopped cilantro and serve immediately while hot and juicy.

Notes

  • Soaking wooden skewers in water for at least 30 minutes prevents them from burning on the grill.
  • Adjust the marinating time based on your schedule; avoid marinating shrimp for over an hour as the acid can start to cook the shrimp.
  • This recipe can be made using a grill pan or broiler if an outdoor grill is unavailable.
  • For added heat, sprinkle some chili flakes or add a dash of hot sauce to the marinade.
  • Serve with a side of steamed rice or a fresh salad to complete the meal.
