For the Chicken:

  • 2 tablespoons soy sauce

  • 1 teaspoon paprika
  • ½ teaspoon chili flakes (optional)
  • Juice of 1 lime
  • Salt and pepper, to taste

For the Kebabs:

  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • Wooden or metal skewers

Instructions

  1. Marinate the Chicken: In a bowl, whisk together olive oil, soy sauce, honey, minced garlic, paprika, chili flakes, lime juice, salt, and pepper. Add the bite-sized chicken cubes and mix well to coat evenly. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor penetration.
  2. Assemble the Kebabs: If using wooden skewers, soak them in water for 20 minutes to prevent burning during grilling. Thread the marinated chicken cubes, pineapple chunks, red bell pepper pieces, and red onion pieces onto the skewers in alternating layers to create colorful kebabs.
  3. Grill the Kebabs: Preheat your grill or grill pan to medium-high heat. Lightly oil the grill grates to prevent sticking. Place the assembled kebabs on the grill and cook for 8 to 10 minutes, turning occasionally, until the chicken is fully cooked through and slightly charred on the edges.
  4. To Serve: Transfer the grilled kebabs to a serving plate. Garnish with fresh cilantro leaves and serve with lime wedges for squeezing over the top. These kebabs pair wonderfully with coconut rice, grilled vegetables, or a fresh salad for a complete meal.
