Grilled Watermelon Steak with Goat Cheese is a unique and refreshing dish that combines the natural sweetness and juiciness of watermelon with smoky grill marks, creamy goat cheese, and a tangy balsamic glaze. Perfect as a light appetizer or a creative side, this recipe offers a delightful blend of sweet, savory, and smoky flavors topped with fresh herbs.

Ingredients

Scale

For the Watermelon Steaks

  • 2 thick slices seedless watermelon (about 1 to inches thick)
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

For Topping

  • ½ cup crumbled goat cheese
  • 1 tbsp honey
  • 1 tbsp balsamic glaze
  • 1 tbsp chopped fresh mint or basil
  • Freshly cracked black pepper, to taste

Instructions

  1. Preheat the Grill: Preheat your grill or grill pan to medium-high heat to ensure it is hot enough to caramelize the watermelon slices properly.
  2. Prepare the Watermelon: Pat the watermelon slices dry with paper towels to remove any excess moisture, which helps achieve better grill marks and caramelization.
  3. Season the Watermelon: Lightly brush both sides of the watermelon slices with olive oil, then season with salt and black pepper for balanced flavor.
  4. Grill the Watermelon: Place the watermelon slices on the grill and cook for 2–3 minutes per side until grill marks appear and the watermelon is slightly caramelized but still firm enough to hold its shape.
  5. Assemble and Serve: Transfer the grilled watermelon steaks to a serving plate. Top each slice with crumbled goat cheese, drizzle with honey and balsamic glaze, sprinkle with chopped fresh mint or basil, and finish with freshly cracked black pepper to taste.

Notes

  • Use seedless watermelon slices that are about 1 to 1½ inches thick for the best grilling texture.
  • Patting the watermelon dry is essential to avoid steaming instead of grilling.
  • If balsamic glaze is unavailable, reduce balsamic vinegar on low heat until syrupy to create a homemade glaze.
  • This dish is best served immediately to enjoy the contrast of warm grilled watermelon and cool goat cheese.
  • Fresh herbs such as mint or basil can be substituted according to preference.
