Instructions

  2. Add Aromatics: Stir in the finely chopped onion and cook for 3–4 minutes until softened and translucent. Add minced garlic, ground cumin, smoked paprika, dried oregano, salt, and black pepper. Cook for an additional minute, stirring frequently until the spices release their aroma.
  3. Wilt the Spinach: Gradually add the fresh spinach to the skillet in batches, stirring continuously until it just begins to wilt. This should take about 2–3 minutes. Ensure all spinach is well incorporated and heated through.
  4. Finish with Feta: Remove the skillet from heat and gently fold in the crumbled feta cheese, allowing it to soften slightly without fully melting to maintain its texture and flavor.
  5. Serve: Garnish with optional red pepper flakes, halved cherry tomatoes, and fresh chopped parsley or dill if desired. Serve the skillet warm as is, alongside rice, or tucked inside warm pita bread for a complete meal.
