  • 1 cup orzo pasta
  • 2 cups chicken broth or water

  • 1 teaspoon lemon zest

For the Roasted Cranberries

  • 1/2 cup fresh or frozen cranberries
  • 1 tablespoon honey
  • 1 teaspoon olive oil

Instructions

  1. Roast the Cranberries: Preheat oven to 375°F (190°C). In a small bowl, toss cranberries with honey and olive oil. Spread on a baking sheet and roast for 12–15 minutes until softened and slightly caramelized. Set aside.
  2. Cook the Orzo: In a medium saucepan, bring chicken broth (or water) and salt to a boil. Add orzo and cook according to package instructions until al dente. Drain if necessary and set aside.
  3. Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 30 seconds. Add chicken pieces, season with salt and pepper, and cook 6–8 minutes per side until golden and cooked through. In the last 2 minutes of cooking, drizzle honey and soy sauce over the chicken, allowing it to glaze. Remove from heat and let rest for a few minutes, then slice if desired.
  4. Prepare the Lemon Feta Sauce: In a small bowl, whisk together feta cheese, Greek yogurt, lemon juice, and lemon zest until smooth. Season with salt and black pepper to taste.
  5. Assemble the Bowl: Divide cooked orzo among serving bowls. Top with honey garlic chicken, roasted cranberries, and drizzle with lemon feta sauce. Garnish with fresh parsley and extra feta if desired.
