For the Turkey Cutlets:
- 2 large turkey breasts, sliced into thin cutlets
- 1 cup breadcrumbs
- ½ cup feta cheese, finely crumbled
- ½ cup grated Parmesan cheese
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp paprika
- ½ tsp chili flakes
- Salt and black pepper to taste
- 2 eggs, beaten
- ½ cup all-purpose flour
- 2 tbsp olive oil
For the Hot Honey Lime Sauce:
- ¼ cup honey
- 1–2 tsp hot sauce
- 1 tbsp lime juice
- 1 tsp lime zest
For Garnish:
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh cilantro, chopped
- Lime wedges
- Preheat Oven: Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
- Prepare Breading Station: Set up three separate bowls: one with all-purpose flour, one with beaten eggs, and one with a mixture of breadcrumbs, crumbled feta, grated Parmesan, oregano, basil, paprika, chili flakes, salt, and black pepper to create the flavorful Mediterranean herb crust.
- Coat Turkey Cutlets: Take each turkey cutlet and coat it first in the flour, shaking off any excess. Next, dip it into the beaten eggs, allowing the excess to drip off. Finally, press the cutlets firmly into the breadcrumb mixture to ensure an even, thick coating.
- Arrange and Oil: Place the breaded cutlets on the prepared baking sheet in a single layer. Drizzle the olive oil evenly over the cutlets to help them crisp up while baking.
- Bake: Bake the turkey cutlets in the preheated oven for 20–25 minutes, flipping them halfway through the cooking time. Bake until they are golden brown, crispy on the outside, and fully cooked inside.
- Make Hot Honey Lime Sauce: While the turkey is baking, combine the honey, hot sauce, lime juice, and lime zest in a small saucepan. Warm gently over low heat, stirring until all ingredients are well blended and heated through. Remove from heat.
- Serve: Once the cutlets are done, drizzle the hot honey lime sauce over them while still warm. Garnish with chopped fresh parsley and cilantro, and serve with lime wedges on the side for an extra burst of citrus flavor.
Notes
- Feel free to adjust the amount of chili flakes and hot sauce according to your preferred spice level.
- For a gluten-free option, substitute the all-purpose flour and breadcrumbs with gluten-free alternatives.
- Make sure turkey cutlets are sliced thin for even cooking and crispier breading.
- Use fresh herbs for garnish to enhance the freshness and visual appeal.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in an oven to maintain crispiness.
