Cake:

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 (20 oz) can crushed pineapple, undrained
  • 1 cup chopped nuts (optional)

Cream Cheese Frosting:

  • 1/2 cup (1 stick) softened butter
  • 1 (8 oz) package cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 1/2 cups confectioners’ sugar
  • Coconut flakes (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine flour, sugar, eggs, baking soda, vanilla extract, salt, and crushed pineapple with its juice. Mix until well blended. Stir in chopped nuts if using.

  3. Pour the batter into a greased 9×13 inch baking pan.
  4. Bake for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean.
  5. While the cake cools, beat the butter, cream cheese, and vanilla extract until smooth and creamy.
  6. Gradually mix in the confectioners’ sugar until the frosting is smooth.

  7. Spread the frosting over the cooled cake.
  8. Sprinkle with chopped nuts and coconut flakes if desired.
