Ingredients

Scale

For the Flatbread:

  • 2 flatbreads or naan
  • 1 tbsp olive oil
  • 1 garlic clove, halved

For the Topping:

  • 23 heirloom tomatoes, sliced
  • 1 ball burrata cheese
  • Salt and freshly ground black pepper, to taste

For the Basil Drizzle:

  • ½ cup fresh basil leaves
  • 3 tbsp olive oil
  • 1 tsp lemon juice
  • Pinch of salt

Optional Finishing:

  • Crushed red pepper flakes
  • Balsamic glaze (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 220°C (425°F) to ensure it’s hot and ready to crisp the flatbreads perfectly.
  2. Prepare Flatbreads: Place the flatbreads or naan on a baking sheet. Brush each flatbread lightly with olive oil. Then rub the flatbread surface with the cut side of the garlic clove to infuse a subtle garlic flavor.
  3. Bake Flatbreads: Bake the flatbreads in the preheated oven for 6 to 8 minutes until they become lightly crisp and turn golden brown around the edges.
  4. Make Basil Drizzle: While the flatbreads bake, combine fresh basil leaves, olive oil, lemon juice, and a pinch of salt in a blender or food processor. Blend until the mixture is smooth and vibrant green.
  5. Assemble the Flatbreads: Remove the baked flatbreads from the oven. Evenly arrange the sliced heirloom tomatoes over the flatbreads. Tear the burrata cheese into pieces and scatter it over the tomatoes for a creamy texture.
  6. Finish & Serve: Generously drizzle the basil sauce over the assembled flatbreads. Season with salt and freshly ground black pepper to taste. Optionally, sprinkle crushed red pepper flakes for heat and drizzle balsamic glaze for a sweet tang. Slice and serve immediately while warm and fresh.

Notes

  • For best flavor, use ripe heirloom tomatoes that are firm yet juicy.
  • Burrata cheese is delicate; tear gently to maintain its creamy texture.
  • The basil drizzle can be made ahead and stored in the fridge for up to two days.
  • Substitute flatbread with naan, pita, or thin pizza crust based on preference.
  • Add crushed red pepper flakes for a spicy kick or balsamic glaze for sweetness.
  • Serve immediately after assembling to keep the flatbread crisp.
