  • 1 tbsp lemon juice
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste

Bowl Base & Vegetables

  • 1 cup cooked rice or quinoa
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/3 cup Kalamata olives, sliced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh mint, chopped

Herb Feta

  • 1/2 cup crumbled feta cheese
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp fresh dill, chopped
  • 1 tsp lemon zest
  • Black pepper to taste

Tzatziki

  • 1/2 cup plain Greek yogurt
  • 1/4 cup grated cucumber (excess water squeezed out)
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 tbsp fresh dill, chopped
  • Salt and black pepper to taste

Hot Honey Drizzle

  • 1/4 cup honey
  • 1/2 tsp chili flakes
  • 1/2 tsp hot sauce (optional)

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, lemon juice, paprika, oregano, cumin, garlic powder, salt, and black pepper. Coat the chicken breasts evenly with the marinade and let them sit for at least 15–20 minutes to absorb the flavors.
  2. Cook the Chicken: Heat a skillet or grill pan over medium heat. Cook the marinated chicken breasts for 5–7 minutes on each side until fully cooked through and golden brown. Remove from heat and let the chicken rest for a few minutes before slicing into strips.
  3. Prepare the Herb Feta: In a small bowl, mix together the crumbled feta cheese, olive oil, chopped parsley, dill, lemon zest, and black pepper until well combined and creamy.
  4. Make the Tzatziki: In another bowl, combine the plain Greek yogurt, grated cucumber with excess moisture squeezed out, lemon juice, olive oil, minced garlic, fresh dill, salt, and pepper. Stir until smooth and creamy.
  5. Make the Hot Honey Drizzle: Gently warm the honey in a small saucepan over low heat. Add chili flakes and optional hot sauce, stirring until the flavors infuse and the drizzle is warm.
  6. Assemble the Bowl: In serving bowls, layer the cooked rice or quinoa as the base. Arrange sliced chicken, cherry tomatoes, diced cucumber, red onion, Kalamata olives, parsley, and mint evenly on top.
  7. Finish with Toppings: Add a generous spoonful of herb feta on each bowl, drizzle with the creamy tzatziki, and finish with a final drizzle of the hot honey for a sweet and spicy kick.
  8. Serve and Enjoy: Serve the bowls fresh at room temperature or slightly chilled. Enjoy the vibrant and balanced flavors of this Mediterranean-inspired power bowl.

Notes

  • Marinate the chicken for longer (up to 2 hours) for more intense flavor.
  • Use quinoa for a gluten-free or higher-protein option in the base.
  • Adjust chili flakes and hot sauce quantity to control the spice level in the honey drizzle.
  • If fresh herbs are unavailable, dried herbs can be substituted but fresh is recommended for best flavor.
  • Make tzatziki a few hours ahead and chill to let the flavors meld.
