For the Chicken & Herb Gravy

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 tbsp flour
  • 1 cup chicken broth
  • ½ cup milk or cream
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt & pepper to taste

For the Mashed Potatoes

  • 4 medium potatoes, peeled and cubed
  • 2 tbsp butter
  • ¼½ cup milk
  • Salt & pepper to taste

For the Glazed Carrots

  • 3 cups sliced carrots
  • 1 tbsp butter
  • 1 tbsp honey or maple syrup
  • Salt & pepper to taste

Instructions

  1. Make the Mashed Potatoes: Place the peeled and cubed potatoes in a pot of salted water and bring to a boil. Cook for 15 to 20 minutes until the potatoes are fork-tender. Drain well. Mash the potatoes with butter and gradually add milk until desired creamy consistency is reached. Season with salt and pepper to taste.
  2. Cook the Chicken: Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper. Sear the chicken for 5 to 6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside to rest.
  3. Make the Herb Gravy: In the same skillet, melt butter and add the finely diced onions. Cook until the onions become soft and translucent. Add the minced garlic and cook for an additional 30 seconds. Stir in the flour and cook for 1 minute to form a roux. Slowly pour in the chicken broth and milk while whisking continuously to avoid lumps. Add the dried thyme, dried rosemary, salt, and pepper. Let the gravy simmer for 3 to 4 minutes until it thickens. Return the cooked chicken breasts to the skillet, coating them generously with the herb gravy.
  4. Make the Glazed Carrots: In a separate pan, melt butter over medium heat. Add the sliced carrots and sauté for 5 minutes. Stir in honey, salt, and pepper. Cover the pan and cook for an additional 5 minutes until the carrots are tender and have a glossy glaze.
  5. Serve: Plate the creamy mashed potatoes, glazed carrots, and herb-gravy chicken breasts. Spoon extra gravy over the top for added flavor. Enjoy your wholesome and delicious meal.
