For the Brownie Crust:
- 1 box (18–20 oz) brownie mix, plus ingredients listed on package (eggs, oil, water)
For the Cheesecake Filling:
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 1 tsp vanilla extract
- 4 large eggs
- 8 oz semisweet chocolate, melted and slightly cooled
For the Ganache Topping:
- 1 cup heavy cream
- 8 oz semisweet chocolate, chopped
- Preheat oven and prepare brownie crust: Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper. Prepare brownie batter according to package instructions and pour into the pan. Bake for 20–25 minutes.
- Make the Cheesecake Filling: Beat cream cheese and sugar, add sour cream, vanilla, eggs, and melted chocolate. Pour over cooled brownie crust.
- Bake the Cheesecake: Place pan in a water bath and bake for 55–65 minutes. Cool in the oven, then refrigerate.
- Prepare Ganache Topping: Heat cream, pour over chocolate, stir until smooth. Spread over chilled cheesecake.
- Serve: Refrigerate until set, then slice and serve.
