Homemade French Onion Chicken Rice Recipe

For Caramelized Onions:
- 2 tbsp butter
- 2 large onions, thinly sliced
- 1 tsp sugar (to help caramelize)
For Rice Mixture:
- 2 cups cooked rice (white or brown)
- 2 cups shredded rotisserie chicken (or cooked chicken breast)
- 1 (10.5 oz) can cream of chicken soup
- 1 cup sour cream
- 1 cup shredded mozzarella cheese
- 1 cup shredded Swiss or Gruyère cheese
- ½ cup chicken broth
- 1 tsp garlic powder
- 1 tsp thyme
- Salt & pepper, to taste
- Fresh parsley, for garnish
- Caramelize the Onions: In a skillet, melt butter over medium heat. Add sliced onions + sugar. Cook 15–20 min, stirring occasionally, until golden and caramelized.
- Mix the Base: In a large bowl, combine cooked rice, shredded chicken, cream of chicken soup, sour cream, garlic powder, thyme, salt & pepper. Stir well.
- Layer & Assemble: Spread rice mixture into a greased 9×13 baking dish. Top with caramelized onions. Pour chicken broth evenly over everything.
- Add Cheese: Sprinkle mozzarella and Swiss/Gruyère cheese over the top.
- Bake: Bake at 375°F (190°C) for 25–30 minutes until bubbly and golden on top.
- Serve & Enjoy: Garnish with fresh parsley and serve hot!
