For Caramelized Onions:

  • 2 tbsp butter
  • 2 large onions, thinly sliced
  • 1 tsp sugar (to help caramelize)

For Rice Mixture:

  • 2 cups cooked rice (white or brown)
  • 2 cups shredded rotisserie chicken (or cooked chicken breast)
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Swiss or Gruyère cheese
  • ½ cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp thyme
  • Salt & pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Caramelize the Onions: In a skillet, melt butter over medium heat. Add sliced onions + sugar. Cook 15–20 min, stirring occasionally, until golden and caramelized.
  2. Mix the Base: In a large bowl, combine cooked rice, shredded chicken, cream of chicken soup, sour cream, garlic powder, thyme, salt & pepper. Stir well.
  3. Layer & Assemble: Spread rice mixture into a greased 9×13 baking dish. Top with caramelized onions. Pour chicken broth evenly over everything.
  4. Add Cheese: Sprinkle mozzarella and Swiss/Gruyère cheese over the top.
  5. Bake: Bake at 375°F (190°C) for 25–30 minutes until bubbly and golden on top.
  6. Serve & Enjoy: Garnish with fresh parsley and serve hot!

Notes

  • Swap chicken for turkey or add mushrooms for variation.
