For the Honey Lime Chicken:

  • 2 boneless, skinless chicken breasts, diced
  • 1 tbsp olive oil
  • 2 tbsp honey
  • Juice of 1 lime
  • 1 tsp lime zest
  • 2 garlic cloves, minced
  • 1/2 tsp chili powder
  • Salt & black pepper, to taste

For Coconut Cauliflower Rice:

  • 3 cups cauliflower rice (fresh or frozen)
  • 1/3 cup full-fat coconut milk
  • 1 tbsp olive oil
  • Pinch of salt

For the Stack:

  • 1 ripe avocado, diced
  • 1 tbsp chopped fresh cilantro
  • Extra lime wedges, for serving

Instructions

  1. Cook chicken: Heat olive oil in a skillet over medium heat. Add diced chicken and cook for 5–6 minutes until lightly golden and cooked through.
  2. Make glaze: In a small bowl, whisk together honey, lime juice, lime zest, minced garlic, chili powder, salt, and pepper. Pour this mixture over the cooked chicken and cook for an additional 2–3 minutes until the glaze is slightly caramelized and the chicken is well coated. Remove from heat.
  3. Prepare coconut cauliflower rice: In a separate skillet, heat olive oil over medium heat. Add cauliflower rice and sauté for 4–5 minutes. Stir in full-fat coconut milk and a pinch of salt, continue cooking for another 2–3 minutes until the cauliflower rice is tender and creamy.
  4. Assemble stack: Using a small bowl or ring mold, begin by layering the coconut cauliflower rice as the base, then add the honey lime chicken on top, and finish with a layer of diced ripe avocado.
  5. Finish: Sprinkle the stack with freshly chopped cilantro and serve with extra lime wedges for squeezing over the dish just before eating.
