  • 2 cups cauliflower rice
  • 1 tbsp olive oil or butter
  • 1 clove garlic, minced
  • 2 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh cilantro or dill, chopped
  • Salt and black pepper, to taste

For the Avocado Layer:

  • 1 ripe avocado, diced
  • 1 tsp lime juice
  • Pinch of salt

Instructions

  1. Cook Chicken: Heat 1 tablespoon olive oil in a skillet over medium-high heat. Season the diced chicken with salt, black pepper, and smoked paprika. Cook the chicken for 5–7 minutes until golden brown and cooked through. Then add honey, lime zest, lime juice, and minced garlic. Toss gently until the chicken is well coated and fragrant. Remove from heat.
  2. Prepare Herb Cauliflower Rice: In the same skillet, heat 1 tablespoon olive oil or butter over medium heat. Sauté the minced garlic for about 30 seconds until aromatic. Add the cauliflower rice and cook for 4–5 minutes until tender. Stir in the chopped parsley, cilantro or dill, and season with salt and black pepper to taste. Remove from heat.
  3. Season Avocado: In a small bowl, gently toss the diced avocado with 1 teaspoon lime juice and a pinch of salt to enhance its flavor and prevent browning.
  4. Assemble Stack: On a serving plate, layer the herb cauliflower rice as the base. Spoon the honey lime chicken over the rice, then top with the seasoned avocado layer.
  5. Serve: Enjoy the stack warm, optionally garnished with extra fresh herbs or lime zest for added zing.
