Instructions

  1. Prepare the marinade: In a bowl, whisk together olive oil, lime juice, lime zest, honey, minced garlic, chili powder, ground cumin, salt, and black pepper until fully combined.
  2. Marinate the chicken: Add the chicken breasts to the marinade and coat thoroughly. Let them marinate for 15 to 30 minutes to absorb the flavors.
  3. Cook the chicken: Heat a skillet or grill pan over medium-high heat. Cook the chicken breasts for 5 to 7 minutes on each side or until the internal temperature reaches 165°F (74°C). Remove from heat and let the chicken rest for 5 minutes before slicing or dicing.
  4. Prepare the rice layer: In a bowl, gently mix the cooked jasmine or basmati rice with lime juice, chopped fresh cilantro, and a pinch of salt to enhance the flavor.
  5. Make the avocado layer: In another bowl, combine the diced avocados with lime juice, finely diced red onion, chopped cilantro, and salt. Toss gently to avoid mashing the avocado.
  6. Assemble the stack: Place a round mold or measuring cup on a serving plate. Add a layer of the lime-infused rice, pressing lightly to create a firm base. Next, add a layer of the sliced or diced honey lime chicken, followed by the avocado mixture on top.
  7. Finish and garnish: Carefully lift the mold to reveal the layered stack. Garnish with diced cherry tomatoes, extra cilantro leaves, and lime wedges. Serve immediately to enjoy the fresh flavors.
