Ingredients

Scale

Honey Lime Chicken

  • 600 g (1.3 lb) boneless, skinless chicken breasts or thighs
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • Zest and juice of 1 lime
  • 2 garlic cloves, minced
  • ½ teaspoon chili flakes (optional)
  • Salt and black pepper, to taste

Mango Cilantro Rice

  • 2 cups cooked jasmine or basmati rice
  • 1 cup ripe mango, diced small
  • 2 tablespoons fresh lime juice
  • ¼ cup fresh cilantro, finely chopped
  • Salt, to taste

Optional Garnishes

  • Extra chopped cilantro
  • Sliced green onions
  • Lime wedges

Instructions

  1. Marinate the Chicken: In a bowl, whisk together olive oil, honey, lime zest, lime juice, minced garlic, chili flakes, salt, and black pepper. Add the chicken breasts or thighs to the bowl and toss well to evenly coat each piece. Cover and let marinate for at least 20 minutes to allow flavors to infuse.
  2. Cook the Chicken: Heat a skillet or grill pan over medium-high heat until hot. Place the marinated chicken in the pan and cook for 5 to 7 minutes on each side, or until the chicken is caramelized on the outside and fully cooked through. Remove from heat and allow to rest briefly before slicing thinly.
  3. Prepare the Mango Cilantro Rice: In a mixing bowl, combine the warm cooked jasmine or basmati rice with diced mango, fresh lime juice, chopped cilantro, and salt to taste. Gently mix to incorporate all ingredients without mashing the mango.
  4. Assemble the Stacks: Using a ring mold or a small bowl, layer the mango cilantro rice at the base, then top with slices of the honey lime chicken. Press lightly to form a neat stack.
  5. Garnish and Serve: Add a sprinkle of extra chopped cilantro, sliced green onions, and a lime wedge on the side for garnish. Serve the stacks warm and enjoy the fresh and vibrant flavors.

Notes

  • Marinate the chicken longer for deeper flavor, up to 2 hours in the fridge.
  • Use ripe mangoes for the best sweetness and texture.
  • Adjust chili flakes to your preferred spice level or omit for a milder dish.
  • Jasmine rice offers a floral aroma, while basmati provides a nuttier flavor — both work well.
  • Can be prepared ahead and reheated; store chicken and rice separately for best texture.
