Instructions

  1. Marinate Chicken: In a bowl, whisk together honey, lime juice, lime zest, minced garlic, olive oil, paprika, cumin, salt, and black pepper. Coat the chicken breasts thoroughly in the marinade and let them marinate for at least 20 minutes to absorb all the flavors.

Remove the chicken and let it rest for 5 minutes before slicing.
  3. Prepare Rice: In a pan, warm the cooked jasmine or basmati rice with olive oil and a pinch of salt. Fluff the rice gently with a fork to separate the grains and allow the flavors to meld.
  4. Make Minted Feta Yogurt: In a small bowl, combine plain Greek yogurt, crumbled feta cheese, finely chopped fresh mint, lemon juice, minced garlic, and black pepper. Stir until smooth and creamy.
  5. Assemble Stack: Use a ring mold or plate for plating. Start by layering the warm rice at the bottom. Top the rice with the sliced honey lime chicken breast, then spoon the minted feta yogurt over the chicken layer evenly.
