For the Buttery Shortcrust Base:
- 200g all-purpose flour
- 100g cold unsalted butter, cubed
- 1 egg yolk
- 1–2 tbsp cold water
- Pinch of salt
For the Whipped Feta Filling:
- 200g feta cheese, crumbled
- 100g cream cheese
- 2 tbsp Greek yogurt
- 1 tbsp olive oil
- Black pepper, to taste
For the Topping:
- 2–3 tbsp hot honey (or honey + chili flakes)
- 40g chopped pistachios
- Optional: extra feta crumbles, fresh thyme or mint leaves
- Make the crust: Rub butter into flour and salt until sandy. Add yolk and water. Mix into a dough. Chill for 30 mins.
- Roll & bake: Preheat oven to 180°C (350°F). Roll dough and press into a tart tin. Prick base. Line with parchment and fill with baking beans. Bake 15 mins blind, then remove weights and bake 10 more until golden. Cool slightly.
- Whip the feta: Blend feta, cream cheese, yogurt, oil, and pepper until smooth and fluffy.
- Fill & bake again: Spread feta mix in cooled shell. Bake 10–12 mins until just set. It should remain soft. Cool to room temp.
- Top it off: Drizzle with hot honey and sprinkle with chopped pistachios. Add herbs if desired.
- Serve warm or room temp: Best shared in wedges.
