For the Cheesecake Layer:

  • 600 g cream cheese, softened
  • 200 g granulated sugar
  • 3 large eggs
  • 150 ml sour cream
  • 1 teaspoon vanilla extract

For the Caramel Topping:

  • 200 g granulated sugar
  • 90 g unsalted butter
  • 120 ml heavy cream
  • Pinch of sea salt (optional)

Instructions

  1. Preheat oven and prepare pan: Preheat oven to 325°F (160°C) and line a 9-inch (23 cm) springform pan with parchment paper.
  2. Make Brownie Base: Melt butter and dark chocolate, add sugar, eggs, vanilla, flour, cocoa, and salt. Pour into pan and bake for 20 minutes.
  3. Prepare Cheesecake Layer: Beat cream cheese and sugar, add eggs, sour cream, and vanilla. Pour over brownie base.
  4. Bake Cheesecake: Bake for 50–55 minutes until set. Cool and refrigerate for at least 4 hours.
  5. Make Caramel Topping: Melt sugar, add butter, then cream. Cook until thickened. Stir in sea salt if using.
