Indulge in the delightful flavors of a Japanese Strawberry Parfait, a luscious dessert featuring layers of fresh strawberries, whipped cream, vanilla ice cream, and pastry cream topped with macarons and mint leaves.

Ingredients

Scale

Base:

  • 1 cup (150 g) fresh strawberries (sliced)
  • 2 tbsp strawberry jam or strawberry puree
  • ½ cup granola or crushed biscuits (optional for crunch)

Cream Layer:

  • 1 cup (240 ml) heavy cream, chilled
  • 3 tbsp powdered sugar
  • ½ tsp vanilla extract

Ice Cream & Custard:

  • 2 scoops vanilla ice cream
  • ½ cup pastry cream (or vanilla pudding)

Toppings:

  • Fresh strawberries (whole and halved)
  • Macarons (optional, as in your photo)
  • Whipped cream (for decorating top)
  • Mint leaves or small herbs for garnish

Instructions

  1. Prepare the Whipped Cream: In a chilled bowl, whip heavy cream, powdered sugar, and vanilla until soft peaks form. Transfer to a piping bag for neat layering.
  2. Build the Parfait Layers: Start with strawberry jam or puree at the bottom of each tall glass. Add a few slices of fresh strawberries pressed against the glass. Spoon in some whipped cream, then add granola or biscuit crumbs. Add a scoop of vanilla ice cream. Layer more sliced strawberries and pastry cream.
  3. Top & Decorate: Pipe lots of whipped cream on top, creating fluffy swirls. Add fresh strawberries, macarons, and a dollop of custard. Garnish with mint leaves for a fresh touch.

Notes

  • For added crunch, consider layering granola or crushed biscuits between the parfait layers.
  • You can customize the toppings with your favorite fruits or nuts for a unique twist.
