  • 1 tbsp lime juice
  • Salt, to taste
  • Optional: finely chopped chili for heat

  • 8 small flour or corn tortillas
  • Lime wedges
  • Optional: shredded lettuce, avocado slices, or sour cream

Instructions

  1. Marinate Shrimp: In a bowl, combine the peeled and deveined shrimp with Jamaican jerk seasoning, olive oil, lime juice, salt, and pepper. Mix well to coat all the shrimp evenly. Let the mixture sit for 15–20 minutes to allow the flavors to develop.
  2. Prepare Pineapple Salsa: In a separate bowl, combine the diced fresh pineapple, finely chopped red onion, diced red bell pepper, chopped fresh cilantro, lime juice, and salt to taste. If you like some heat, add finely chopped chili at this stage. Mix well and refrigerate until ready to serve to let the flavors meld.
  3. Cook Shrimp: Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2–3 minutes on each side or until the shrimp turn pink and opaque, indicating they are cooked through. Avoid overcooking to keep shrimp tender.
