Ingredients

Scale

For the chicken:

  • 2 large chicken breasts (cubed)
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp chili flakes
  • Salt and black pepper to taste
  • Juice of 1/2 lemon

For the rice base:

  • 2 cups cooked basmati or jasmine rice
  • 1 tbsp olive oil
  • Salt to taste
  • Fresh parsley (chopped)

For the herb feta:

  • 1/2 cup feta cheese (crumbled)
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley (chopped)
  • 1 tsp dried oregano
  • Black pepper to taste

For the tzatziki:

  • 1 cup Greek yogurt
  • 1/2 cucumber (grated and drained)
  • 1 clove garlic (minced)
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried dill or fresh dill
  • Salt and black pepper to taste

For toppings:

  • 1/2 cup cherry tomatoes (halved)
  • 1/2 cucumber (sliced)
  • 1/4 red onion (thinly sliced)
  • 1/4 cup kalamata olives
  • Fresh parsley or dill
  • Lemon wedges

Instructions

  1. Marinate the chicken: In a bowl, combine cubed chicken breasts with olive oil, paprika, cumin, dried oregano, garlic powder, onion powder, chili flakes, lemon juice, salt, and black pepper. Mix well to coat all pieces evenly. Let it marinate for at least 15 minutes to absorb the flavors.
  2. Cook the chicken: Heat a skillet over medium-high heat. Add the marinated chicken pieces and cook until they turn golden brown and are fully cooked through, approximately 6-8 minutes, turning occasionally for even cooking.
  3. Prepare the tzatziki sauce: In a bowl, mix Greek yogurt with grated and drained cucumber, minced garlic, olive oil, lemon juice, dill, salt, and black pepper. Stir well and chill in the refrigerator until ready to serve to let flavors meld.
  4. Make the herb feta: Combine crumbled feta cheese with olive oil, chopped fresh parsley, dried oregano, and black pepper in a small bowl. Mix gently to blend the herbs into the feta.
  5. Prepare the rice base: Fluff the cooked basmati or jasmine rice with a fork. Stir in olive oil, salt to taste, and freshly chopped parsley for a fragrant and light base.
  6. Assemble the power bowl: Place a generous portion of the herbed rice into bowls. Top with the cooked chicken, cherry tomatoes, sliced cucumber, red onion, kalamata olives, and dollops of herb feta cheese.
  7. Finish and serve: Drizzle each bowl generously with the chilled tzatziki sauce. Garnish with additional fresh herbs like parsley or dill and lemon wedges on the side for squeezing. Serve immediately while fresh and vibrant.

Notes

  • For extra heat, add more chili flakes to the chicken marinade.
  • Substitute basmati rice with quinoa for a gluten-free or higher protein option.
  • Ensure the grated cucumber is well-drained to prevent watery tzatziki.
  • Marinate chicken longer for deeper flavor, up to overnight in the fridge.
  • Use fresh herbs whenever possible for best taste.
  • To make this recipe vegetarian, replace chicken with grilled halloumi or roasted chickpeas.
