  • 4 pita breads or flatbreads
  • Sliced tomatoes (about 1 medium tomato)
  • Sliced red onion (about ¼ medium onion)
  • Shredded lettuce (about 1 cup)

Instructions

  1. Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, paprika, ground cumin, salt, and black pepper until well combined. Add the chicken breasts or thighs, ensuring they are fully coated with the marinade. Cover and refrigerate for at least 30 minutes, up to 12 hours, to allow the flavors to penetrate the meat.
  2. Cook the Chicken: Preheat a grill pan or skillet over medium-high heat. Make the Cucumber Feta Sauce: In a bowl or food processor, combine Greek yogurt, crumbled feta cheese, grated cucumber (fully squeezed to remove excess water), olive oil, lemon juice, grated garlic, and freshly chopped dill or parsley. Blend or stir until the sauce is creamy and smooth. Season with black pepper to taste.
  4. Warm the Pitas: Lightly warm the pita breads or flatbreads in a dry pan or oven until soft and pliable, about 1–2 minutes per side.
