Asparagus

  • 1 bunch asparagus (about 1 lb), ends trimmed
  • 1 tbsp olive oil or butter
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare Lobster Mash: Boil the peeled and quartered potatoes in salted water for about 15-20 minutes or until tender. While potatoes cook, boil lobster tail for 6-8 minutes until opaque, then let cool and chop lobster meat into small pieces. Drain potatoes and mash with butter, cream, minced garlic, lobster meat, salt, and pepper until smooth and creamy.
  2. Cook Asparagus: Steam asparagus for 3-5 minutes until bright green and tender yet crisp, or sauté them in olive oil or butter over medium heat for about 5 minutes. Season with salt and pepper, then set aside.
  3. Season and Sear Lamb Chops: Pat lamb chops dry, season both sides generously with salt and black pepper. Heat a skillet over medium-high heat with olive oil or butter. Sear lamb chops for 3-4 minutes per side for medium-rare doneness. Adjust cooking time if you prefer different doneness. Allow lamb to rest for a few minutes after cooking.
  4. Plate and Serve: Spoon a generous portion of lobster mashed potatoes onto each plate, place a seared lamb chop on top, and arrange the asparagus alongside. Serve immediately while hot for the best flavor and texture.
