Rye Bread Layer:

  • 4 slices rye bread, cut into 2-inch cubes

Pastrami Layer:

  • 1 lb pastrami, thinly sliced

Sauerkraut Layer:

  • 1 can (14.5 oz) sauerkraut, drained

Cheese Layer:

  • 4 cups shredded Swiss cheese

Caraway Seed Layer:

  • 2 tsp caraway seeds

Pickle Layer:

  • 1 cup dill pickles, chopped

Egg Mixture:

  • 1 cup milk
  • 3 large eggs, beaten
  • ⅓ cup Thousand Island–style creamy dressing
  • ¼ cup yellow mustard

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C). Grease a 9×13-inch or 11×7-inch baking dish with cooking spray.
  2. Prepare Rye Bread Layer: Spread cubed rye bread in the bottom of the dish.
  3. Add Pastrami: Layer half of the pastrami slices over the bread.
  4. Layer Ingredients: Spread sauerkraut, pickles, 1 tsp caraway seeds, and 2 cups of Swiss cheese evenly.
  5. Repeat Layers: Add remaining pastrami, remaining Swiss cheese, and 1 tsp caraway seeds.
  6. Prepare Egg Mixture: Whisk together milk, eggs, dressing, and mustard. Pour over the casserole.
  7. Add Breadcrumbs: Sprinkle breadcrumbs on top.
  8. Bake: Cover with foil and bake for 45 minutes.
