Cake:

Glaze (optional):

  • 1 cup powdered sugar
  • 23 tbsp fresh lemon juice 🍋

Instructions

  1. Prep & Preheat: Preheat oven to 175°C / 350°F. Grease and flour a 9×5 inch loaf pan or line with parchment paper.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Cream Butter & Sugar: In a large bowl, beat softened butter and sugar until light and fluffy (3–5 minutes).
  4. Add Eggs & Flavors: Add eggs one at a time, beating well after each. Mix in lemon zest, lemon juice, and vanilla extract.
  5. Combine & Fold: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Gently fold in blueberries, being careful not to crush them.
  6. Bake: Pour batter into prepared pan. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. Let cool in pan for 10 minutes, then transfer to a wire rack.
  7. Glaze (Optional): Mix powdered sugar with lemon juice until smooth. Drizzle over cooled cake for a bright finishing touch.
