Chicken:

  • 1 whole chicken (45 lbs)

Marinade:

  • ¼ cup olive oil
  • 4 cloves garlic, minced
  • 1 lemon, halved
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tbsp chopped fresh rosemary (or 1 tsp dried)
  • 1 tbsp chopped fresh thyme (or 1 tsp dried)
  • Salt & pepper to taste

Additional:

  • 1 onion, quartered
  • Extra lemon slices & herbs for garnish

Instructions

  1. Preheat oven: Preheat the oven to 425°F (220°C) and pat the chicken dry with paper towels.
  2. Prepare marinade: In a bowl, whisk together olive oil, garlic, lemon zest, lemon juice, rosemary, thyme, salt, and pepper.
  3. Marinate chicken: Rub the marinade all over the chicken, including under the skin. Stuff the cavity with lemon halves, onion, and herb sprigs.
  4. Roast the chicken: Tie the chicken legs with kitchen twine and place the chicken breast-side up in a roasting pan. Roast for about 1 hour 15 minutes, or until the internal temperature reaches 165°F (74°C), basting halfway through with pan juices.
  5. Rest and garnish: Let the chicken rest for 10–15 minutes before carving. Garnish with lemon slices and herbs before serving.
