Ingredients

Scale

For the Shrimp

  • 12 large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp smoked paprika
  • Salt & black pepper, to taste
  • Juice of ½ lemon

For the Couscous

  • 1 cup couscous
  • 1 cup vegetable or chicken broth
  • 1 tbsp olive oil
  • Pinch of salt

For the Bowl

  • ½ cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • 2 tbsp chopped fresh parsley
  • 2 tbsp crumbled feta cheese
  • Optional: drizzle of olive oil or lemon juice

Instructions

  1. Prepare the Couscous: Place the couscous in a heatproof bowl and pour the hot vegetable or chicken broth over it. Cover the bowl tightly and let it sit for 5 minutes to allow the couscous to absorb the liquid. After 5 minutes, fluff the couscous gently with a fork, then stir in the olive oil and a pinch of salt to enhance flavor and texture.
  2. Sauté the Garlic: Heat 1 tablespoon olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it to preserve its delicate flavor.
  3. Cook the Shrimp: Add the peeled and deveined shrimp to the skillet along with smoked paprika, salt, and black pepper to taste. Cook the shrimp for 2 to 3 minutes per side, until they turn opaque and pink, indicating they are fully cooked. Squeeze the juice of half a lemon over the shrimp to add fresh brightness right before removing them from heat.
  4. Assemble the Bowl: Use the couscous as the base in individual serving bowls. Top with the cooked lemon garlic shrimp, halved cherry tomatoes, diced cucumber, chopped fresh parsley, and crumbled feta cheese.
  5. Finish and Serve: Optionally, drizzle a little extra olive oil or a splash of lemon juice over the assembled bowls for added flavor. Serve immediately while warm for the best taste and texture.

Notes

  • For a spicier kick, add a pinch of crushed red pepper flakes to the shrimp while cooking.
  • Use gluten-free couscous alternatives like quinoa to make this dish gluten free.
  • Fresh parsley can be substituted with cilantro or basil for a different herbaceous note.
  • Leftover bowls store well in the refrigerator up to 2 days but add fresh toppings just before serving.
  • To make this dish dairy-free, omit the feta or substitute with a vegan cheese option.
