Instructions

  1. Prepare the Crumble Mixture: In a large mixing bowl, combine the all-purpose flour, rolled oats, brown sugar, melted unsalted butter, and salt. Stir the mixture until it turns crumbly and all ingredients are evenly distributed.
  2. Press the Crumble Base: Lightly grease an 8×8 inch baking pan. Take about two-thirds of the crumble mixture and press it firmly into the bottom of the pan to form an even crust layer.
  3. Make the Lemon Filling: In a separate bowl, whisk together the lemon zest and juice, sugar, eggs, and sweetened condensed milk until the mixture is smooth and fully blended.
  4. Assemble the Bars: Pour the lemon filling evenly over the pressed crumble base. Then, sprinkle the remaining one-third of the crumble mixture evenly over the lemon filling to create the topping layer.
  5. Bake the Bars: Place the pan in a preheated oven at 350°F (175°C) and bake for 25 to 30 minutes, or until the crumble topping is golden brown and the filling is set.
  6. Cool and Slice: Remove the bars from the oven and allow them to cool completely in the pan. Once cooled, cut into 9 equal bars and serve.
