  • 1 tsp lemon zest
  • ½ cup crumbled feta cheese
  • 1 tbsp chopped fresh parsley
  • Optional: toasted pine nuts or sliced almonds

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy clean-up.
  2. Season the Broccoli: In a large bowl, combine the broccoli florets with olive oil, minced garlic, salt, black pepper, and red pepper flakes if using. Toss thoroughly to evenly coat the broccoli with the seasoning.
  3. Roast: Spread the seasoned broccoli evenly on the prepared baking sheet. Roast in the preheated oven for 18–22 minutes, turning the broccoli halfway through cooking to ensure it becomes tender and develops crispy, caramelized edges.
  4. Add Lemon: Once roasted, remove the broccoli from the oven and immediately drizzle with fresh lemon juice and sprinkle with lemon zest. Toss gently to combine all the bright flavors.
  5. Finish & Serve: Transfer the broccoli to a serving plate. Top with crumbled feta cheese, chopped fresh parsley, and, if desired, toasted pine nuts or sliced almonds. Serve warm as a vibrant and healthy side dish or a light vegetarian main.
