For the Roasted Broccoli:

  • 4 cups broccoli florets
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp red pepper flakes (optional)

For Finishing:

  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • ½ cup crumbled feta cheese
  • 1 tbsp chopped fresh parsley
  • Optional: toasted pine nuts or sliced almonds

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Season the Broccoli: In a large bowl, toss the broccoli florets with olive oil, minced garlic, salt, black pepper, and red pepper flakes if using, ensuring all pieces are evenly coated.
  3. Roast: Spread the seasoned broccoli evenly on the prepared baking sheet. Roast in the oven for 18 to 22 minutes, turning once halfway through, until the broccoli is tender and has crispy, caramelized edges.
  4. Add Lemon: Remove the roasted broccoli from the oven and immediately drizzle with fresh lemon juice, then sprinkle lemon zest over the top. Toss gently to combine all the flavors.
  5. Finish & Serve: Transfer the broccoli to a serving plate. Top with crumbled feta cheese, chopped fresh parsley, and optional toasted pine nuts or sliced almonds. Serve warm as a delicious side dish or light vegetarian plate.

  • For extra crunch and flavor, toast pine nuts or sliced almonds lightly before adding them as a topping.
