Truffle Mixture
- 1/2 cup (113g) unsalted butter, softened
- 1/4 cup (60ml) fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon vanilla extract
- 2 cups (240g) powdered sugar
- 2 cups (180g) crushed vanilla wafer cookies or graham cracker crumbs

- Cream Butter & Lemon: In a mixing bowl, combine the softened butter, fresh lemon juice, lemon zest, and vanilla extract. Stir them together until the mixture is smooth and creamy, ensuring the flavors are well blended.
- Add Sugar & Crumbs: Gradually incorporate the powdered sugar into the lemon butter mixture, stirring constantly. Once smooth, mix in the crushed vanilla wafer cookies or graham cracker crumbs until a firm dough forms that can easily be rolled into balls.
- Chill Dough: Cover the bowl with plastic wrap and refrigerate the dough for 30 to 45 minutes, allowing it to firm up for easier handling.
- Form Truffles: Remove the chilled dough from the fridge and scoop out portions to roll into 1-inch diameter balls, shaping them evenly with your hands.
