Truffle Mixture

  • 2 cups (240g) powdered sugar
  • 2 cups (180g) crushed vanilla wafer cookies or graham cracker crumbs

Instructions

  1. Cream Butter & Lemon: In a mixing bowl, combine the softened butter, fresh lemon juice, lemon zest, and vanilla extract. Stir them together until the mixture is smooth and creamy, ensuring the flavors are well blended.
  2. Add Sugar & Crumbs: Gradually incorporate the powdered sugar into the lemon butter mixture, stirring constantly. Once smooth, mix in the crushed vanilla wafer cookies or graham cracker crumbs until a firm dough forms that can easily be rolled into balls.
  3. Chill Dough: Cover the bowl with plastic wrap and refrigerate the dough for 30 to 45 minutes, allowing it to firm up for easier handling.
  4. Form Truffles: Remove the chilled dough from the fridge and scoop out portions to roll into 1-inch diameter balls, shaping them evenly with your hands.
  5. Finish: For a classic touch, roll each truffle ball in additional powdered sugar. Alternatively, dip each ball into melted white chocolate and place on parchment paper to set, creating a smooth, creamy coating.
  6. Chill & Serve: Place the coated or sugared truffles back in the refrigerator for 10 to 15 minutes to set fully. Serve chilled for the best texture and flavor.
