Instructions

  1. Cook the pasta: Cook the pasta according to the package instructions until al dente. Once cooked, drain the pasta and reserve 1/4 cup of the pasta water for later use. Set the pasta aside.
  2. Sauté garlic and spinach: In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned. Then add the fresh spinach and cook until it wilts, stirring occasionally.
  3. Make the Alfredo sauce: Pour in the heavy cream and bring it to a gentle simmer over medium-low heat. Stir in the grated Parmesan cheese gradually, stirring well until the sauce becomes smooth and creamy. If the sauce is too thick, add a splash of the reserved pasta water to achieve your desired consistency.
  4. Add lobster and pasta: Add the chopped cooked lobster meat and the drained pasta to the skillet. Gently toss everything together so that the pasta and lobster are evenly coated with the creamy Alfredo sauce.
  5. Season and serve: Season the dish with salt and freshly ground black pepper to your taste. Garnish with chopped fresh parsley and serve immediately for the best flavor and texture.
