  • 2 cups fresh arugula or spinach
  • 2 tbsp fresh basil, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. Prepare the Strawberry Balsamic Glaze: In a small saucepan, combine strawberries, balsamic vinegar, honey, and black pepper. Simmer over medium heat for 8–10 minutes, stirring occasionally, until the mixture thickens. Remove from heat and mash slightly with a fork or blend until smooth for a luscious glaze.
  2. Cook the Orzo: Cook the orzo pasta according to package instructions until al dente. Drain well and let it cool slightly to prevent wilting the fresh greens in the salad.
  3. Prepare the Orzo Salad: In a large bowl, mix the cooked orzo with crumbled ricotta salata, halved cherry tomatoes, fresh arugula (or spinach), and chopped basil. Drizzle with olive oil and lemon juice, then season with salt and pepper to taste. Toss gently to combine all flavors.
  4. Grill the Chicken: Preheat your grill or grill pan to medium-high heat. Brush the chicken breasts with olive oil and season evenly with salt, pepper, garlic powder, and dried oregano. Grill chicken for 5–7 minutes on each side, or until fully cooked through and nicely charred on the outside.
