Ingredients

Scale

Cake Batter

  • 300g all-purpose flour
  • 250g granulated sugar
  • 200g unsalted butter, softened
  • 4 large eggs
  • 150ml whole milk
  • 2 tsp baking powder
  • 1 tsp pure vanilla extract

Frosting

  • 200g vanilla frosting (store-bought or homemade)

Instructions

  1. Preheat and Prepare Pans: Preheat your oven to 180°C (350°F). Grease two 8-inch round cake pans thoroughly and lightly dust with flour to prevent sticking.
  2. Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture becomes light, fluffy, and pale in color, typically about 3-5 minutes using an electric mixer.
  3. Add Eggs: Incorporate the eggs one at a time, beating well after each addition to ensure they are fully combined and the batter remains smooth.
  4. Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour and baking powder to evenly distribute the leavening agent.
  5. Mix Batter: Alternately add the flour mixture and milk to the butter mixture in three additions, beginning and ending with the flour. Add the vanilla extract with the milk and mix gently after each addition until fully incorporated without overmixing.
  6. Divide and Bake: Pour the batter evenly into the prepared pans, smoothing the top with a spatula. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool: Allow the cakes to cool in their pans for 10 minutes before transferring them to a wire rack to cool completely to room temperature.
  8. Assemble and Frost: Once cooled, spread a generous layer of vanilla frosting on top of one cake layer. Place the second cake on top and evenly frost the top and sides as desired.
  9. Serve: Slice the cake and serve. Enjoy your luscious layered vanilla cake with a cup of tea or coffee!
